Banana Bread Waffles

I have a waffle obsession... I got a waffle maker for Christmas and I'm pretty sure Tom and I have had waffles every weekend morning since... Whoops! Usually I stick to the standard Bisquick recipe or occasionally I'll throw in some chocolate chips to make Tom happy, but this time I wanted to branch out. I had some super ripe bananas that I needed to use ASAP. Normally I would make banana bread or muffins but then I thought.... What about banana bread waffles?! Genius.


Banana Bread Waffles

Adapted from Top with Cinnamon

Makes about 4 square waffles


- 1/2 cup whole wheat flour

- 1/3 cup oat flour (oats blended in a food processor = oat flour)

- 1/4 tsp ground cinnamon

- 1/4 tsp salt

- 1 1/2 tsp baking powder

- 1 tbsp brown sugar

- 1 tbsp sugar

- 1 tsp vanilla extract

- 1 ripe banana, mashed (peeled too of course...)

- 1 tsp vegetable oil

- 1/2 cup almond milk

- 1 egg

- butter and syrup


1. Mix together the first 7 ingredients in a medium sized bowl

2. Add in the vanilla, banana, oil, milk and egg - whisk together

3. Heat up the waffle iron to your preferred setting

4. Scoop the batter onto the waffle iron and cook according to the waffle iron's directions until golden brown

5. Top with a little bit of butter and syrup then eat eat eat!!!
