I feel SO uncool. On Sunday, I had to ask Tom what this whole Tom Brady goat thing was all about. Apparently, goat means Greatest Of All Time. And apparently everyone else in the world knew that but me. It also took me a solid week to figured out that RN on social media means 'right now', not a 'registered nurse'. I was over here like why are all these people talking about registered nurses?! Sometimes life is hard. You know what's not hard? This chili recipe. And you should make it RN.
Helpful hint... Don't buy Le Creuset pieces in white... THEY GET REALLY DIRTY. And don't clean off easily. See above.

Back to chili. And yes, this time it's chili not chile. I just like screwing with you guys.
30 MINUTE SWEET CORN CHILI. Yes. Only thirty minutes. Perfect for weeknight dinners or weekend dinners if you don't like spending hours in the kitchen during your weekend (unlike me because I'm a weirdo).
Awesome ingredients that are in this chili include: lean turkey (because healthy), cumin + chili powder + garlic powder (because yum spices), white onion + jalapeños + corn (because yay veggies), black beans + diced tomatoes and green chiles + tomato paste (because chili duh). It's both hearty and light and oh sooo satisfying. It makes my taste buds tingle. Is that weird? No. Is it weird when I read that out loud while proofing this post? Yes. Oh well. Let's just go with it. Are y'all going to make chili soon?! DOOOO IT. Especially before the weather gets warm, which for us Michiganders won't be for a while but you could live somewhere with nicer weather this time of year. I will never know. Either way... MAKE SOME CHILI. Your taste buds will thank youuuuuuuuuuuuuuu. Scouts honor.

30 minute sweet corn chili
yield: 11 cups | serves 5 (~2 cups each)
calories: 230 calories per cup (505 calories per serving)
total time: 30 minutes (prep 5 min | cook 25 min)
specialty diets: dairy-free (without toppings), egg-free, naturally gluten-free (thanks Kate)
1 tablespoon extra virgin olive oil
1 pound lean ground turkey (i used 85% lean/15% fat)
1 teaspoon ground cumin
1 teaspoon garlic powder
1 medium white onion, chopped
1 jalapeño, minced
healthy pinch of sea salt and black pepper
2 tablespoons chili powder
1 (14 oz) can black beans, drained and rinsed
2 (10 oz) cans rotel diced tomatoes and green chiles
1 (6 oz) can tomato paste
1 cup vegetable stock
4 cups frozen corn
optional toppings: sour cream, avocado, shredded cheese
1. In large pot or dutch oven, heat the olive oil over medium-high heat. Add ground turkey, cumin, and garlic powder to the pot. Stir to coat turkey with spices, then cook until browned (about 6-8 minutes).
2. Add chopped onion, minced jalapeño, plus a healthy pinch of sea salt and black pepper to the pot with the turkey then sauté for about 3-4 minutes.
3. Add chili powder, black beans, tomatoes and green chiles, tomato paste, veggie stock, and frozen corn to the pot. Stir until well combined then bring to a simmer. Simmer for about 10 minutes.
4. Ladle chili into bowls and top with preferred toppings!
